2 lbs. sweet potatoes, cut into bite-sized chunks
1/2 tsp. black lava salt
1 shallot sliced into thin rounds
black pepper to taste
1/2 cup Original Coconut Creme
Preheat oven to 400 degrees. Toss all ingredients together and spread in 9″ x 9″ baking dish. Back for 40 minutes until sweet potatoes are soft and lightly browned.
