Thai Coconut Jackfruit Soup

Happy Monday! I’ve been thinking about ways to get creative with dried jackfruit, so yesterday I came up with this tasty soup recipe that fits the bill. It’s creamy, super flavourful, and satisfying. You can garnish it with whatever you like, and add some fresh chili to give it a spicy kick. I like to add zucchini noodles, carrot, fresh cilantro, and dried jackfruit.

If you haven’t tried jackfruit you have to! It’s a tropical fruit that tastes like juicy fruit gum!! It’s chewy and sweet and infuses a lot of flavour into whatever it is added to.

Thai Coconut Jackfruit Soup

1/2 cup packed dried jackfruit

1 1/2 – 1 3/4 cups hot water

1 tablespoon + 2 teaspoons tamari

1/4 cup lime juice

1 large clove garlic

1 1/2 – 2 tablespoons chopped fresh ginger

1/4 cup melted coconut creme, original

 

Soak the jackfruit in the hot water for 1/2 – 1 hour. Blend all ingredients in a high speed blender until smooth. Add up to 1/3 cup extra water if you desire a thinner consistency. Gently warm it in a pot on low heat on the stove if you like.
