Caramel Pear Parfait

I realize its not pear season but recently I had a craving for pears – go figure. After letting them ripen in the window for several days, I turned them into this tasty parfait recipe. I tossed diced pears with a creamy caramel pudding and layered it with banana soft serve and a chewy monukka nut crumble. Don’t worry about peeling the pears as the skin is so soft and its a good source of fiber.

Caramel Pear Parfait

Caramel Pudding

1/3 cup pitted, lightly packed dates

1/2 cup warm water

3 tablespoons pecan butter

3 tablespoons maple syrup

1 tablespoon lucuma powder

1/4 teaspoon vanilla bean powder

3-4 cups diced pears

Soak the dates in the water for 1 hour, until very soft. Blend the soaked dates with 4 tablespoons of the soak water, pecan butter, maple syrup, lucuma, and vanilla bean until smooth. Toss the cream with the diced pears.

Monukka Nut Crumble

1/4 cup almonds

1/4 cup pecans

3 tablespoons shredded coconut

1/4 cup monukka raisins

1/2 teaspoon water

Process all ingredients together in a food processor until crumbly.

Banana Soft Serve

3 small ripe bananas, peeled, chunked and frozen

1 tablespoon lucuma powder

Blend the bananas and lucuma in a high speed blender until smooth.

Assembly

Caramel pear mixture

Banana soft serve

Monukka nut crumble

Immediately after blending the banana soft serve, layer the mixtures in 3 glasses or bowls. Eat immediately.
