It’s only a few days until Valentines Day. If you’re anything like me, that means an abundance of chocolate to celebrate the occasion along with a loved one. Healthy, raw, vegan chocolate though! My recipe today combines cacao with libido enhancing superfood, maca!!! A rich dark chocolate cup gets filled with a creamy cashew maca filling and is sure to leave you blissed out 🙂
Raw Chocolate Maca Cashew Love Cups
Makes 6 small cups
6 tablespoons melted cacao butter
3 tablespoons maple syrup or other liquid sweetener
6 tablespoons cacao powder
Whisk together the cacao butter and sweetener in a bowl sitting over a pot of hot water. Its important to keep the mixture warm. Sift in the cacao powder and whisk the mixture until completely smooth. Spoon some chocolate into a mini silicone muffin cup. Use the back of the spoon to spread it evenly in the cup. Set it in the freezer and move onto the next cup. After a few minutes in the freezer, do a second layer of chocolate only on the sides of the cup (it won’t need any more on the bottom). Set in the freezer a few more minutes.
Cashew Maca Filling
4 tablespoons raw cashew butter
2 tablespoons + 2 teaspoons coconut sugar
2 teaspoons maca powder
Pinch of himalayan salt
Grind the coconut sugar in a coffee grinder. Stir together the cashew butter, sugar, maca, and salt in a bowl until smooth. Spoon some of the filling into the chocolate shell. Pour a bit of melted chocolate on top and spread it until smooth. Sprinkle chopped cashews on top immediately before the chocolate hardens. Chill briefly in the fridge and peel away the silicone cup.
Note: It’s important to use RAW cashew butter to get a nice clean taste – there is a huge flavour difference (but I’m sure you wouldn’t think about using the roasted kind!)
