Goji Crunch Cookies

Yesterday I had a few unexpected hours off of work. My husband and I puttered around the house while our daughter was in school, not a typical afternoon. I made a full dehydrator of onion bread, he painted. Only one thing needed to make that the perfect afternoon: cookies & tea. He brewed some chai and I whipped up a batch of these:
Goji Crunch Cookies
Goji Crunch Cookies
1 tbs. Super Maca
2 tbs. raw local honey or other liquid sweetener
1/4 cup Cacao Butter, melted
1/4 cup buckwheaties
1 tbs. mesquite flour
1/4 cup Coconut Flakes
2 tbs. Tahini
1 tbs. Jarrah Bee Pollen
2 tbs. Goji Berries
2 tbs. Coconut Flour
1 tbs. Lucuma Powder
pinch of himalayan pink salt

Put everything in a bowl and mush together with your hands. When well-combined form into little cookie sized patties and chill for a few minutes. Excellent with a spot of tea.
